PERFECT FOR VEGAN RECIPES: Replace egg yolk in emulsions. Can be use to create mayonnaise without egg, creams, ganaches, sponges, fermented doughts (bread and derivateives), ice creams and drinks.
BENEFITS: Emulsifies with a high pH range, cold & hot application below 212°F (100°C),improves freezing & prevents separation of liquid, forms stable emulsion, gives a pleasant sensation on the palate
EASY TO USE: Add to one of the two mixtures (water or fat) of the preparation and integrate into the other, mixing continously until you get a proper emulsion. Dosage: 0.5-2%
